Mario Olianas is an Italian with a big personality living in Leeds. He was born in Vienna and brought up on the island of Sardinia. His Papa is a fisherman and it was he who encouraged Mario's love of good fresh produce.
Mario moved to Yorkshire in 2001 and set up a business with his partner Sonia selling homemade Italian produce at Leeds Farmers Markets. This then led to him branching out and making ewe's milk cheeses out of his unit in Adel, North Leeds. Earlier in 2021 they moved all production to a purpose built unit in the nearby market town Otley.
Mario handpicked a local farmer based near Harrogate, only 12 miles from his dairy in Otley to provide the highest quality ewe's milk.
This is a grilling pecorino, slightly less salty than other squeaky / Halloumi style cheeses. Great for grilling, BBQs, in salads, drizzled with honey or as a veggie burger substitute.
As this cheese is cooked it is able to be enjoyed by those who are pregnant.
