Yorkshire Pecorino is a young sheep’s milk cheese made by Mario Olianas at Yorkshire Pecorino in Otley.
Inspired by Mario’s Sardinian heritage and made using Yorkshire ewe’s milk, the cheese is matured for around 30 days, giving it a fresh, soft texture and delicate flavour.
What does Yorkshire Pecorino taste like?
Fresh, creamy and gently savoury, with lemony yoghurt notes, a little sweetness and a touch of salt.
It is much softer and milder than the hard, mature Pecorinos many people associate with Italy.
Who would enjoy Yorkshire Pecorino?
A really good choice if you enjoy fresh sheep’s milk cheeses, feta or young continental cheeses but want something softer and less salty.
It’s also a lovely introduction to sheep’s milk cheese.
How to serve Yorkshire Pecorino
Serve at room temperature as part of a cheeseboard or use it in salads.
It works particularly well with tomatoes, roasted vegetables, olives and good olive oil.
Stephen’s Take
“This catches people out because they hear ‘Pecorino’ and expect something hard and salty for grating.
Instead, it’s beautifully fresh, soft and slightly lemony. I love cheeses that change someone’s expectations, and this is definitely one of them.”
