A Hard, Alpine cheese, produced by Lynher Dairies; the makers of the famous, Cornish Yarg.
Derived from a Gouda recipe, made using rich Cornish milk from the dairy's herd of grass-fed Ayrshires. A cheese with nutty, Alpine flavours. The texture is created by scalding the curd to a high temperature. Brined for two days, moulded, and then wrapped in a breathable black. The cheese is then matured for sixteen to eighteen months.
