1 pint milk
4 tbsp plain flour
50g butter
1 whole Tunworth cheese - cut into small cubes
200g Godminster Vintage Cheddar - grated
200g pot Yorkshire Poutine Cheese Curds
Sobrasada - as much or as little as you want to sprinkle on the top
1 head of Cauliflower cut into florets
1 head of Broccoli chopped cut into florets
Olive Oil
1 clove of garlic, crushed
Seasoning
Heat oven to 200C/180C fan/gas 6. Toss the cauliflower and broccoli with the oil, garlic and seasoning. Roast for for 15-20 minutes until starting to soften.
Meanwhile prepare the cheese sauce -

Pour 500ml milk into a saucepan and add the flour, butter and seasoning

Turn on a medium heat and whisk the mixture. Keep whisking fast as the butter melts and the mixture comes to the boil – the flour will disappear and the sauce will begin to thicken

Whisk for another 2 mins while the sauce bubbles then stir in the Tunworth and Cheddar until melted
Place the roasted brocolli and cauliflower into a large oven proof dish, pour the cheese sauce over. Sprinkle the Yorkshire Poutine over the top along with as much Sobrasada as you wish. Pop under the grill for 10 minutes or until the cheese is brown and bubbling on top.
Enjoy with some crusty bread to mop up the cheese sauce.
