Hard Alpine cheese produced by Lynher Dairies who also make Cornish Yarg, based in Ponsanooth just outside Truro, Cornwall. Award-winning, Kern was crowned Supreme Champion at the World Cheese Awards in 2017.

It was originally derived from a Gouda recipe, it is made using rich Cornish milk from the dairy's herd of grass-fed Ayrshires then adding nutty Alpine starter cultures to create a close texture that is slightly flaky. 

A cheese with nutty Alpine flavours, they scald the curd to encourage caramelised notes. Once in the moulds and floated in a bath of brine for two days the breathable black wax coating is painted on. The cheese is then matured for sixteen to eighteen months. 

Recipe Idea:

Cornish Kern is a harder cheese with a higher melting point but works just as well as Yarg when used in cooking - Kern was used in a soda bread recipe in 2020’s Great British Bake Off!

We like the sound of this recipe - Mushroom Spelt Risotto with Cornish Kern. It is a great cheese for cooking with when a recipe asks for Gruyere. We also like to shave it over pasta.
