The last traditionally made Lancashire, Mrs Kirkham passed the recipe to son Graham, who is the current head-cheesemaker at their family farm in Lancashire. They have been making cheese for over 40 years, using milk from their own herd of Holstein Friesian's. Made to the traditional two day curd recipe, using the curds from yesterdays make, combined with todays, creating the most complex of Lancashire's.
Kirkham's Lancashire has a light, and crumbly texture, that not only melts in the mouth, but is also a great melter.
