A clothbound, cheddar-style sheep’s milk cheese made by the Errington family in South Lanarkshire. Corra Linn is made with raw ewe’s milk on the farm and matured to develop a firm, crumbly texture with plenty of depth and character.
Expect a sweet, nutty flavour with earthy, grassy notes and a lovely savoury finish. It’s a brilliant British alternative to Manchego — full of flavour, but still beautifully balanced and dangerously easy to keep nibbling.
