One of Spain's most well-known cheeses, however, this is one of last remaining, natural rinded Manchego's, using the milk of the Black La Mancha ewe. Made by the Parra family, using organic methods.
It is nutty, herbaceous, sweet and savoury, zesty and buttery, beautifully moist, and very complex, with a slightly pliable, crumbly texture.
