This is one of our most popular cheeses and one of the hardest for our cheesemongers to cut! Not surprising then that Gouda is one of the most popular cheeses in the world, accounting for 50% of all cheese consumed globally.
This is a traditional Gouda straight from Holland - this is aged for 24 months so is super mature and hard. It has a close, dry texture with a salty crystalline crunch that comes with the extra ageing. Strong, caramel piquant flavours rounded off with a little sweetness.
Dark orange in colour with an inedible waxed rind as you get with all traditional Goudas. This is a mature, strong, full flavoured cheese with fragrant aromas of chocolate, hazelnut, caramel and wood.
Wijngaard is a small family-run business which has been operating since 1936 - currently run by the 4th generation under Jan. All their milk comes from grass-fed cows that roam outside during the summer months. The cows produce pure, fresh milk rich in proteins and milk fat, perfect to produce this cheese.
As well as red wines such as Malbec, Shiraz and Merlot this cheese pairs well with Strong Belgian Ales such as Tripels or Dubbels.
There are a number of recipes on the cheesemakers website including this Croque Monsieur.
