Our truffled version of Baron Bigod. The centre of this is made up of our own mix of black truffles and mascarpone, surrounded by an incredibly ripe unctuous layer of Brie then the beautiful white bloomy rind. All the same wonderful flavours of Baron Bigod with the added joy of truffles.
A brie-style cheese produced in Suffolk, by Jonny and Dulcie Crickmore. Made to a traditional Brie de Meaux recipe, using the milk from their herd of Montbeliarde's; a low yielding breed, but high in fats and protein. Pasture fed for as much of the year as possible, and fed on homegrown hay, haylage, grass and maize silage in the wet, wintery months. Carefully hand-ladled curds are placed in to moulds, using belle-a-brie ladles. They're then salted, and aged for up to 8 weeks.
A smooth and silky paste, with fresh vegetal flavours, and an earthy, mushroom flavoured rind.
