Quickes Mature Cheddar - 250g
A rich and buttery cheddar that offers outstanding depth of flavour, which develops as it reaches the back of the palate. Brothy to grassy to caramel notes
Leeds Blue - 200g
Produced in small batches in Ilkley by Mario Olianas. Rich, buttery, salty with a real depth of flavour which lingers and melts in the mouth
Baron Bigod - 250g
A brie-style cheese produced in Suffolk, by Jonny and Dulcie Crickmore. Made to a traditional Brie de Meaux recipe, using the milk from their herd of Montbeliarde's; a low yielding breed, but high in fats and protein. Pasture fed for as much of the year as possible, and fed on homegrown hay, haylage, grass and maize silage in the wet, wintery months. Carefully hand-ladled curds are placed in to moulds, using belle-a-brie ladles. They're then salted, and aged for up to 8 weeks. A smooth and silky paste, with fresh vegetal flavours, and an earthy, mushroom flavoured rind.
