A semi-soft, square shaped, Italian washed-rind cheese. The weekly washing in brine gives the cheese its distinctive pinky orange-coloured rind, with a light grey, sage green mould, and a meaty, savoury flavour. The paste is silky, with flavours of untoasted nuts, and freshly sawn wood.
DOP Taleggio has a four ring marking on its rind, to signify its status. The cheese must be produced within three areas in Italy, which include Bergamo, Veneto and Piedmont.
