Produced at Sparkenhoe Farm by Will Clarke, the son of owners Jo and David.
The plan was to create another cheese as well as their Red Leicester, along the lines of a traditional Pasteurised Stilton as a way to use up all the milk produced by their herd of Holstein cows.
However they were so happy with the unpasteurised cheese they first produced that they've carried on making a raw milk Stilton style blue.
A mild rich salty blue, a great one for those who like a blue but don't like it too strong. This cheese still has lots of great flavour, texture is quite creamy and dense and it has beautiful veining like Stiltons.
We love this melted on top of a homemade beef burger or use it for our blue cheese sauce when eating chicken wings.
