Seasonal Cheese Selection - Festive/Winter

Did you know that many of the cheeses we stock at George & Joseph are seasonal? This means that the taste, and/or texture can change throughout the year depending on a number of factors such as temperature, the feed the animals are eating, and the number of daylight hours!

Some cheeses are even so seasonal they stop production completely such as St James, the Ewe's milk soft cheese from Cumbria. 

With this in mind, four times a year on the passing of each season our cheesemongers choose five new cheeses for our Seasonal Cheeseboard to reflect the time of year and to showcase the cheeses that are tasting particularly good for the next few months. 

Available until the end of February we are celebrating the Festive season with this decadent cheeseboard of dreams. 

Vacherin Mont d'Or - UnPasteurised, Cow's Milk, Animal Rennet - 200g

Vacherin is produced only from mid-summer to late autumn using the milk from Montbeliarde cows. Any cheeses made outside of this six month period cannot be called Mont d'Or. Within these months the cows are grazed in the lower valleys producing a particularly rich and fragrant milk which is perfect for making Vacherin. The rest of the year when the cow's are high-mountain grazing in the Alps their milk is used to produce Comte.

24 Month Aged Comte - UnPasteurised, Cow's Milk, Animal Rennet - 200g

A nutty hard French alpine cheese and we've included this in our festive selection to celebrate the new 24 month aged version we have just commenced stocking. This cheese is made using the spring/summer milk from the same Montbeliarde cows that produce the milk for Vacherin. Comte however is different in that being a hard cheese it is aged, which means it is then available all year round - something we're very thankful for.

Stichelton - UnPasteurised, Cow's Milk, Animal Rennet - 200g

This exquisite stilton-style blue (due to the use of raw milk it cannot call itself a stilton) is produced by American Joe Schneider on the Welbeck Estate, Nottinghamshire. Everything in the production produces is done by hand including the ladling of the curds making this a beautifully rich, spicy blue which is well rounded on the palate despite being strong, finishing with a hint of salt. In our opinion one of the best blue's produced in the UK right now!

Pitchfork Cheddar - UnPasteurised, Cow's Milk, Animal Rennet - 200g

Produced by Trethowan's Dairy who also make Gorwydd Caerphilly this Cheddar is in a class of it's own. It was recently awarded Supreme British Cheese at the 2019/2020 World Cheese Awards and fourth best cheese in the world. This is a full flavoured, mature, creamy Somerset Cheddar and one we'll be serving up on Christmas Day.

Truffle Pecorino - UnPasteurised, Ewe's Milk, Animal Rennet - 200g

Made with 4% real truffle, this is a Pecorino with Truffle that laughs in the face of other truffle cheeses. From the island of Sardinia, only the best sheep's milk from the smallest farms on the island is used. This is a hard cheese which is aged for a minimum of five months - it is sharp and spicy with a strong truffle finish. The richness and decadence of it makes it the obvious choice for any festive cheeseboard. 

 

This Cheese Selection includes approx 1kg of cheese, feeding 6 - 10 people. Also included is 2 packs of Stockans Orkney Oatcakes, Fine Cheese Co Dottato Figs and Fine Cheese Co Moscato Grape Nectar.
