Produced by head Cheesemaker Charlie Westhead at Neals Yard Creamery near Dorstone, Herefordshire. The cheese is named after Charlie's dog.
This is a full fat triple cream cheese, made using whole milk with extra cream added into the process. This is an incredibly soft rich creamy cheese, most similar to a Delice or Vignotte. Aged for only 2 to 3 weeks it is fresh and lactic when young, with more mushroomy flavours developing as it matures.
