Our very first Academy of Cheese Level 1: Associate Course.
As this is the Level 1 course there are no prerequisites to attend this, everyone is welcome!
On completion successfully of the end of course exam you will then receive your industry-recognised accreditation and will have a much wider knowledge of how cheese is made; its provenance; how to select and present it; and how to taste it
Three Zoom webinars will be held on three consecutive Wednesday evenings in July between 6pm and 8pm with Stephen Fleming, the owner of George & Joseph.
Stephen brings a wealth of cheese knowledge and an unrivalled passion for cheese following over ten years of working in the cheese industry first with his local market stall, then setting up the bricks & mortar shop in Chapel Allerton in 2013.
The dates for this course are Wednesdays: 14th, 21st, 28th July.
Choose either PDF course materials which are free of charge or pay an extra £10 to have printed materials sent to you.
If you choose the Cheese Included option you will receive two deliveries of cheeses to taste over the three weeks. If you choose the Course Only option you will be provided with a list which you can use to source your own cheeses prior to the first session.
Over the three weeks you will learn:

▪️ Maturing and affinage
▪️ How to select a cheeseboard
▪️ Techniques for cutting, packing and caring for cheese
▪️ The key descriptors of cheeses and how to pair them with drinks
▪️ The history of cheesemaking and large scale versus artisan production
▪️ Tasting and identifying cheeses using the AOC Structured Approach to Tasting
This is not a boring course! It is fun and engaging with class sizes kept small to enable easy interaction with Stephen and with the rest of the group.
