A traditionally handmade Dutch gouda produced by The Cornish Gouda Co, based on a small family dairy farm near Looe, Cornwall.
The Spierings family moved from The Netherlands in 1998 to start dairy farming. However as milk prices became poorer and it was harder to maintain the business their youngest son Giel decided to diversify the business into cheesemaking to keep it viable. It is still a truly family run business which each member having a different responsibility. Giel is the cheesemaker, his parents Joost & Annemarie run the farm and brother Jan is the Farm Agronomist managing the crops the family use to feed their pedigree herd of Holstein Friesians.
This cheese is their award-winning Mature Gouda, aged for 10 to 12 months. A rich flavoursome cheese, aged to give it more depth of flavour but keeps a great level of moisture. It also has the salty crunch from the little crystals which form at around 8 months of ageing. Awarded Best Hard Cheese at the Great British Cheese Awards in 2016.
Gouda is a great melting cheese so works really well in Mac & Cheese, fondue and grilled cheese sandwiches. The younger a Gouda and the more moisture it has the better it is at melting.
