A truly seasonal cheese, made by Martin Gott and Nicola Robinson, at Holker Farm, on the Cavendish Estate, in Cumbria. A farmstead cheese, made by extremely skilled cheesemakers, where their animals come first, resulting in beautiful milk, to make this uniquely exquisite cheese.
A washed-rind, ewes milk cheese that changes batch-to-batch, never mind season-to-season. Early in the year you find fresh, lactic flavours that deepen, and richen through the subsequent months.
