Produced at Sparkenhoe Farm, by Will Clarke, son of Jo and David, whom in 2005 revived traditional Red Leicester making, using the milk of their pedigree Holstein-Fresian herd to make the only Red Leicester using traditional methods.
A savoury and bright blue, with a depth of complexity. This cheese has buckets of flavour. Texturally slightly crumbly, but dense, with sporadic blue veining.
